For which component exactly do you want to get code coverage? I'm not too familiar with the XEN system architecture, but I'm assuming it goes something like this:
host hardware -> host OS (Linux)  -> XEN hypervisor application  -> virtual machine -> guest OS 
For  and  you can use the gcov-kernel patch for Linux. For , assuming that this is a simple user-space application, just compile it with gcc flags -fprofile-arcs -ftest-coverage, run it and when it ends, you can use gcov (the gcc tool) or lcov (the LTP extension) to display code coverage.
