When I started with MikTeX, I had the same problem: I had not understood
that MikTeX is NOT a program, but a data base ! The programs are in
\texmf\miktex\bin
,
where \texmf is either in the root of your directory or whereever you
have decided to put the texmf tree during installation.
So you need a batch (command line) program such as
\texmf\miktex\bin\latex foo.tex
,
STARTED FROM THE subdirectory in which your source foo.tex
resides.
You can create such a batch (and put it on you desktop, e.g.) whichever
way you please. Of course, simply typing
latex foo
works only if you have made sure that \texmf\miktex\bin is in your
(WINDOWS) search path.
This is, of course, the raw, pedestrian way to proceed; but it's best if
you want to understand what's going on. At the end of the day, you will
want to somehow merge your call to whatever ASCII text editor you plan
to use, with the mikTeX call of Tex/LaTex, a viewer, printer and all
that.
There is a myraid of possiblities to do that; but in order to avoid
starting a major war, I will refrain from even talking about that. If you
tell me privately what your favorite way of dealing with such issues is,
I can give you more help (privately).
