jpeg_filename is that name of the files output when motion is detected.
snapshot_filename are the files that are taken at regular intervals. Usually called lastsnap.jpg. Used with parameter snapshot_interval.

As for question 2, I wrote a script that simply scans through my capture folder and deletes anthing older than 30 number of days. For my clients I have a script that deletes video only when the drive is running out of space. They're in php.
