Try looking at zeroconf and multicast DNS.

Yes, we'd like to use multicasting.  The router we will be connecting the
Stagecoach to will hopefully assign IP addresses to each Gumstix using
DHCP.  Is it safe to assume this will work?

We would also like to connect the Stagecoach directly to the PC.  If we run
a DHCP server on the PC, again can we assume that this will work and each
Gumstix will get a unique IP address?  Will the Gumstix COMs be able to
send packets to the multicast address?

reading from the gumstix.com stagecoach:

Unique IP address assigned per Overo COM
100Mbps switched Fast Ethernet

So each overo will be able to use Avahi (zeroconf) that is preinstall 

you will be able to ping it overo.local
ssh root@...

Normally each overo have hostname of overo so this will need to be change, except if they already have done this for you, I don't think so.

So you will need to simply change hostname overo, /etc/hostname, for overo1 for first board and overo2 for second etc....

So Yes will be easily done

Yes since each overo have a IP, as describe at gumstix.com and the stagecoach have a switch integrated, as describe on the gumstix.com....
