Just click the record button -- it will ask you for the file type+quality,
then it shows an input monitor so that you can adjust the level before
recording starts. From then on it's just 'start recording' 'stop
recording'. I don't really see a superfluous step in there.

I would swear there is a file/save selection as... menu choice.
But if I'm wrong, there is a 'edit/copy to new' menu option after which
you can simply file/save as. Additionally it is possible to set a number
of cue points (whereever you want your file split) and then export the
whole lot with file/save as multiple files.
