Our office DSL router is on the fritz, so I'm actually currently
setting up a gumstix to do *exactly* that, plus NAT/firewall and some
other stuff too, using a connex 400xm and a netDUO card. All the
packages you need are in the buildroot, though I've customized the
kernel a bit to add stuff like pppoe which isn't in there by default.

In theory, from what I've heard, yes. Do some googling for asterisk
and gumstix and take a look at the astlinux project -- at least at
some point there was an astlinux port to gumstix which was working.
The claim at the time was that it could route (no transcoding audio)
40 simultaneous calls or something.
